Potato Pancakes with Kale and Garlic
- 3 cups of leftover mashed potatoes or 2 pounds of potatoes, peeled and cooked in boiling water
- 3 cups of kale, washed in chopped
- 4 cloves of garlic, minced
- salt
- pepper
- olive oil
Directions:
Heat about a tablespoon of oil in a pan. Add garlic and kale and cook for about 10 minutes. Combine with mashed potatoes, salt, and pepper, and formed into cakes. Heat a bit of butter in a pan and cook potato pancakes a few at a time until browned, about 4 - 5 minutes on each side.
