Potato and Kale Pancakes

My family's favorite method of using up leftover mash potatoes has always been potato pancakes.  These probably aren't your traditional potato pancakes make from grated potatoes and onions.  Instead, in their simplest form, these are mashed potatoes, formed into cakes, and fried up in a skillet.  In order to make them a bit more exciting, I added kale and garlic.  My picky brother might not like them this way, but, for me, these are pretty much the perfect comfort food.


Potato Pancakes with Kale and Garlic

  • 3 cups of leftover mashed potatoes or 2 pounds of potatoes, peeled and cooked in boiling water
  • 3 cups of kale, washed in chopped
  • 4 cloves of garlic, minced
  • salt
  • pepper
  • olive oil

Directions:
Heat about a tablespoon of oil in a pan.  Add garlic and kale and cook for about 10 minutes.  Combine with mashed potatoes, salt, and pepper, and formed into cakes.  Heat a bit of butter in a pan and cook potato pancakes a few at a time until browned, about 4 - 5 minutes on each side.
